Rocky White Christmas Road Recipe
Ingredients
500g white chocolate
200g halved marshmallows
100g quartered dried apricots
100g roughly chopped macadamia nut
100g dessicated coconut
50g rice bubbles (or puffed rice of the famous snap, crackle and pop fame)
Line a square cake tin (20cm x 20cm, and at least 4cm deep) with baking paper.
Melt the white chocolate using the method of the bain-marie.
In a large bowl, mix all the dried ingredients. Add the melted white chocolate and stir thoroughly.
Pour the mix in the lined cake tin. Let it cool down for 5 to 10 minutes and leave in the fridge for about 2 hours or until firm.
When it has hardened properly, unmould and cut into small squares.
You can also choose to cut thin slices to serve (as it is quite rich). Another option is to put lollipop sticks in the mix before it goes in the fridge, and then you can serve as Rocky White Christmas Road pops!
